Melt: Cook over medium-low heat, stirring constantly, until melted and smooth. Simmer: Increase heat to medium and bring to a gentle boil, stirring frequently. Cook: Continue to simmer for 3 minutes, stirring constantly. Finish: Remove from heat and stir in vanilla extract. Cool: Let cool slightly (to about 140°F) before serving.
