Molten Chocolate Lava Cake for Two

Ingredients:

  • 1 ounce semisweet chocolate, chopped
  • 2 tablespoons unsalted butter, cut into pieces
  • 2 tablespoons + 1 teaspoon powdered sugar
  • 1 large egg, at room temperature, separated
  • 1 1/2 tablespoons all-purpose flour
  • Pinch kosher salt
  • Ice cream (for serving)
  • Whipped cream (for serving)
  • Hulled and quartered fresh strawberries (for serving)
  • Salted caramel sauce (store-bought or homemade, for serving)
  • Hot fudge sauce (store-bought or homemade, for serving)

Instructions:

  1. Preheat oven: Adjust oven rack to middle position and preheat oven to 390°F.
  2. Melt chocolate:
    • Method 1 (Water Bath): Combine chocolate and butter in a heatproof bowl set over a pan of simmering water (make sure the water doesn't touch the bottom of the bowl). Stir occasionally until melted and smooth.
    • Method 2 (Microwave): Combine chocolate and butter in a microwave-safe bowl. Microwave in short bursts (20 seconds), stirring after each burst, until melted and smooth.
  3. Whisk in sugar: Whisk powdered sugar into the melted chocolate mixture.
  4. Combine egg and yolk: In a small bowl, whisk the egg white briefly with a fork. Add half of the egg white to the egg yolk in a separate bowl. Discard the remaining egg white.
  5. Combine wet ingredients: Add the egg yolk mixture to the chocolate mixture and whisk until well combined.
  6. Add dry ingredients: Stir in flour and salt until just combined.
  7. Bake: Pour batter into a 4-ounce ramekin. Bake for 12-14 minutes, or until the edges are set but the center is still molten.
  8. Serve immediately: Let the cake cool for 1 minute before adding desired toppings (ice cream, whipped cream, strawberries, salted caramel sauce, hot fudge sauce). Enjoy!
