Brown Butter Rice Krispie Treats with Sprinkles

Yields: 16 servings Prep time: 15 minutes Cooling time: 1 hour Total time: 1 hour 15 minutes Ingredients: 6 tablespoons unsalted butter ¾ teaspoon coarse Kosher salt (or ½ teaspoon table salt) 1 teaspoon vanilla extract 10 ounces mini marshmallows (about 6 ½ cups) 4 cups Rice Krispies cereal ¼ cup sprinkles (for this recipe I used Valentine's Day sprinkles) Instructions: Prepare the pan: Lightly grease the bottom and sides of an 8 inch baking pan with butter. Lightly grease your mixing bowl and spatula as well. Brown the butter: In a saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, for about 5 minutes. The butter will foam and brown, and the water will evaporate. Scrape up the browned bits with a spatula and stir them into the butter. Reduce heat to low. Yields: 28 Cookies Prep Time: 15 mins Cook Time: 10 mins Ingredients: 2 2/3 cups all-purpose flour 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 cup unsalted butter, softened 1 1/4 cups granulated sugar 1 large egg 1 1/2 tsp vanilla extract 1 tsp corn syrup (optional) 1 cup Valentine's Day sprinkles Instructions: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Cream together butter and sugar until light and fluffy. Beat in egg, vanilla, and corn syrup (if using). Whisk together flour, baking soda, baking powder, and salt. Gradually add dry ingredients to wet, mixing until just combined. Stir in 1/2 cup sprinkles. Roll dough into 1 1/2-inch balls. Place on baking sheets. Gently press down on each cookie. Sprinkle with remaining sprinkles. Bake for 10-12 minutes, or until golden brown. Cherries Jubilee

This classic dessert features warm cherries simmered in  sugar and Kirsch, and served over vanilla ice cream. Yields: 4 servings Prep time: 15 minutes Cook time: 10 minutes Ingredients: 1 pound fresh ripe sweet cherries, cleaned and pitted 1/3 cup granulated sugar Juice of 1/2 lemon 1/3 cup cherry brandy (Kirsch) or rum Vanilla ice cream, for serving Instructions: Combine Ingredients: In a flameproof skillet, combine cherries, sugar, and lemon juice. Simmer: Cover and cook over medium-low heat for 5 minutes, or until sugar dissolves. Cook: Uncover and increase heat to medium-high. Cook until cherries are juicy and syrupy, about 5 minutes more. Flambé (Optional): Remove from heat. Carefully add the brandy. Ignite with a long match or lighter. Swirl gently until flames subside. Serve: Serve immediately over scoops of vanilla ice cream.
