Brown Butter Rice Krispie Treats with Sprinkles

Rice Krispie Treats with red and pink sprinkles.


Yields: 16 servings Prep time: 15 minutes Cooling time: 1 hour Total time: 1 hour 15 minutes

Ingredients:

  • 6 tablespoons unsalted butter

  • ¾ teaspoon coarse Kosher salt (or ½ teaspoon table salt)

  • 1 teaspoon vanilla extract

  • 10 ounces mini marshmallows (about 6 ½ cups)

  • 4 cups Rice Krispies cereal

  • ¼ cup sprinkles (for this recipe I used Valentine's Day sprinkles)

Instructions:

  1. Prepare the pan: Lightly grease the bottom and sides of an 8 inch baking pan with butter. Lightly grease your mixing bowl and spatula as well.

  2. Brown the butter: In a saucepan, melt the butter over medium heat. Continue cooking, swirling the pan occasionally, for about 5 minutes. The butter will foam and brown, and the water will evaporate. Scrape up the browned bits with a spatula and stir them into the butter. Reduce heat to low.

  3. Melt marshmallows: Stir in the salt and vanilla extract. Add the marshmallows and stir frequently over low heat until melted, leaving a few slightly unmelted for gooeyness.

  4. Combine ingredients: In a mixing bowl, combine the Rice Krispies and sprinkles. Pour the melted marshmallow mixture over the cereal and stir until well combined.

  5. Press into pan: Immediately spread the mixture evenly into the prepared pan. Press down gently with a greased spatula or buttered hands. Sprinkle with additional sprinkles, if desired.

  6. Cool and cut: Let the treats cool and set for about 1 hour. Cut into squares and enjoy!

Notes:

  • I sprinkle more sprinkles over the top and press down gently for an extra festive look.

  • You can skip the sprinkles and have them plain.

  • Store leftover treats in an airtight container at room temperature for up to 1 week.

  • Freeze for up to 3-6 months.

Filet Mignon with Bordelaise Sauce

Yields: 1 sandwich Prep Time: 5 minutes Cook Time:  6-10 minutes Ingredients: 2 slices crusty bread (like ciabatta) 4 ounces goat cheese, crumbled 4-5 fresh figs, thinly sliced 2 tablespoons balsamic glaze 2 tablespoons butter, softened Fresh arugula (optional) Instructions: Prepare the bread: Spread softened butter on one side of each bread slice.
