Honey Chai-Spiced Pound Cake

Yields: 1 Bundt cake (10 cup pan)  Prep Time: 20 mins Bake Time: 50 mins

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup light brown sugar, packed

  • ¼ cup honey

  • 2 large eggs, room temperature

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • 1 tsp salt

  • 1 tbsp cinnamon

  • 2 tsp ginger

  • 2 tsp cardamom

  • 1 ½ tsp allspice

  • ½ tsp black pepper

  • 2 cups all-purpose flour

  • 1 cup sour cream, room temperature

  • 2 ½ tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F

  2. Cream together: In a large bowl, beat butter, brown sugar, and honey with an electric mixer until light and fluffy (about 2 minutes).

  3. Add eggs: Beat in eggs one at a time, scraping down the sides of the bowl after each addition.

  4. Dry ingredients: Stir in baking powder, baking soda, salt, and spices.

  5. Combine wet and dry: Gently fold in half the flour. Stir in sour cream and vanilla. Fold in remaining flour until just combined.

  6. Bake: Grease a 10-cup Bundt pan. Pour batter into pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool: Let cool in pan for 15 minutes before inverting onto a wire rack to cool completely.

  8. Serve: Store leftovers tightly wrapped at room temperature or freeze for longer storage.
