Traditional Key Lime Pie Recipe

This quick and easy key lime pie recipe features a classic graham cracker crust and a tangy filling made with egg yolks, sweetened condensed milk, and the vibrant zest and juice of key limes.


Yields: 8 servings Prep Time: 30 minutes Cook Time: 35 minutes Chilling Time: 3 hours


Ingredients:

  • For the Lime Filling:

    • 4 teaspoons grated key lime zest

    • 4 egg yolks

    • 14 ounces sweetened condensed milk

    • ½ cup fresh key lime juice


  • For the Graham Cracker Crust:

    • 2 cups graham cracker crumbs (approximately 14 full graham crackers)

    • ⅓ cup light brown sugar

    • ½ cup unsalted butter, melted

    • Pinch salt  


  • For the Whipped Cream Topping:

    • 1½ cups heavy cream, chilled

    • ½ cup powdered sugar

    • ½ teaspoon vanilla extract


Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Make the Filling: In a medium bowl, whisk together the lime zest and egg yolks for 2 minutes. Gradually whisk in the sweetened condensed milk, then the lime juice. Set aside at room temperature to thicken while you prepare the crust.

  3. Make the Crust: In a medium bowl, combine the graham cracker crumbs, brown sugar, and salt. Drizzle with the melted butter and toss with a fork until evenly moistened. Press the mixture firmly into the bottom and sides of a 9-inch pie plate. Bake for 10 minutes, then transfer to a wire rack to cool completely.  

  4. Bake the Pie: Pour the lime filling into the cooled crust. Bake for 15-17 minutes, or until the center is set but still slightly jiggly. Let the pie cool completely on a wire rack. Refrigerate for at least 3 hours, or preferably overnight.

  5. Make the Whipped Cream: In a chilled bowl, beat the heavy cream with an electric mixer on medium speed until soft peaks form. Gradually add the powdered sugar and vanilla extract, beating until stiff peaks form.

  6. Assemble and Serve: Top the chilled pie with whipped cream. Garnish with lime slices, if desired. Serve immediately or refrigerate, covered, for up to 3 days.

Tips & Notes:

  • Key Lime Juice:

    • If fresh key limes are unavailable, use bottled key lime juice (Nellie & Joe's is a popular brand).

    • Alternatively, consider using Amoretti Natural Key Lime Artisan Flavor for a convenient and flavorful option.

  • Key Lime Zest: If fresh key limes aren't available, substitute regular lime zest.

  • Make-Ahead: This pie can be made up to 2 days in advance. Top with whipped cream just before serving.

  • Freezing: Freeze the unadorned pie (no whipped cream) for up to 1 month. Thaw overnight in the refrigerator.
