Yield: 4 servings Prep time: 5 minutes Cook time: 12-20 minutes

Ingredients:

  • 1 pound asparagus, trimmed

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder (optional)

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 400F. Line a baking sheet with foil (optional but makes for easier clean up).

  2. Arrange the asparagus in a single layer on the baking sheet.

  3. Drizzle the asparagus with olive oil and sprinkle with garlic powder, sea salt, and black pepper.

  4. Toss the asparagus to coat it evenly with the oil and seasonings.

  5. Roast the asparagus for 8-11 minutes for thin stalks, 12-15 minutes for average stalks, or 16-20 minutes for thick stalks, or until crisp-tender. The roasting time will vary depending on the thickness of the asparagus.

Tips:

  • For even crispier asparagus, roast it at a higher temperature (425 F) for a shorter amount of time (10-15 minutes).

  • If you don't have garlic powder, you can use minced fresh garlic instead.

  • You can also add other seasonings to the asparagus, such as dried herbs, Parmesan cheese, or red pepper flakes.

Serving size: This recipe makes about 4 servings.

Enjoy!

A Green Side of Magic: My Love-Hate Affair with Roasted Asparagus

Asparagus. The mere mention of the word might elicit groans from some, but for me, it's a constant reminder of the magic of simple cooking. You see, I'm not a natural asparagus enthusiast. It's one of those vegetables that always seemed a bit… too green. A bit too… grassy.

However, over the years, I've learned to appreciate its subtle charms. And let me tell you, oven-roasted asparagus is a revelation.

The process is simple: toss the spears with a bit of olive oil, sprinkle with salt and pepper, and roast them in a hot oven. As they roast, the asparagus transforms. The vibrant green color deepens, the edges crisp and caramelize, and the subtle grassy notes give way to a delightful sweetness.

It's a bit like witnessing a culinary metamorphosis. From a seemingly ordinary vegetable, something truly magical emerges. And while I may not be head over heels for asparagus in every form, I must admit, roasted asparagus has earned a special place on my plate.

Plus, it's a healthy and versatile side dish. It pairs perfectly with grilled fish, roasted chicken, or even a simple steak. And let's be honest, it looks incredibly impressive on a dinner plate.

So, the next time you're looking for a simple yet elegant side dish, give this recipe a try. You might just surprise yourself.

P.S. Don't forget to experiment with different seasonings! A sprinkle of garlic powder, a squeeze of lemon juice, or a dusting of Parmesan cheese can elevate this dish to new heights.

I hope this blog post has convinced you to give roasted asparagus another try!
