Homemade Simple Italian Bread

Yields: 1 large loaf Prep Time: 5 minutes Cook Time: 40 minutes Total Time: 45 minutes

Ingredients:

  • 3 ¼ cups all-purpose flour + more for dusting

  • 1 tsp sea salt

  • 1 ½  cups warm water

  • 2 tsp instant yeast (or active dry yeast)

Instructions:

  1. Combine Ingredients: In a large mixing bowl, combine flour, salt, and yeast. Mix well to combine.

  2. Add Water: Pour in warm water and mix until a soft dough forms. It's okay if it's slightly sticky.

  3. First Rise: Cover the bowl with plastic wrap and a tea towel. Let the dough rise at room temperature for 2-3 hours, or until doubled in size.

  4. Shape the Dough: Lightly flour your work surface. Gently turn out the dough onto the floured surface. With floured hands, shape the dough into a round ball. Avoid excessive handling.

  5. Score the Loaf: Using a sharp knife, lightly score an "X" on the top of the loaf, or make a few shallow cuts.

  6. Prepare Dutch Oven: Preheat your oven to 450°F (232°C) with the Dutch oven inside for at least 45 minutes.

  7. Bake: Carefully place the shaped dough directly into the hot Dutch oven. Cover with the lid and bake for 30 minutes.

  8. Uncover and Finish: Remove the lid and bake for another 5-10 minutes, or until the crust is golden brown and sounds hollow when tapped.

  9. Cool: Remove the bread from the Dutch oven and transfer it to a wire rack to cool completely before slicing. This will help maintain its crispiness.

Tips & Variations:

  • For a larger loaf: Use the "Original Large Loaf Recipe" ingredients and baking time.

  • Using a Pizza Stone: If you prefer to use a pizza stone, preheat it in the oven while it heats up. Bake the bread directly on the hot stone for 30-45 minutes, or until golden brown.

  • Steam Injection: For extra crispiness, place a small pan filled with water on the bottom rack of the oven while baking.
